AG#28 - Imperial Stout (Exceeding the Mechanical Limit!)
Brewed yesterday.

Fermentables:
Pale Malt - 2450g - 32%
Wheat Malt - 1530g - 20%
Munich Malt - 1150g - 15%
Caramalt - 765g - 10%
Roasted Barley - 305g - 4%
Chocolate Malt - 305g - 4%
Flaked Barley - 305g - 4%
Flaked Maize - 230g - 3%
Flaked Oats - 150g - 2%
Black Malt - 150g - 2%
Brown Malt - 150g - 2%
Amber Malt - 150g - 2%

Hops:
Admiral @ 60 mins 70g
Whitbread Golding @ 10 mins 20g
Bobek @ 0 mins 10g

Final Volume: 15 Litres
Original Gravity: 1.110
Final Gravity: 1.034
Alcohol Content: 10.1% ABV
Total Liquor: 27.2 Litres
Mash Liquor: 19.2 Litres
Mash Efficiency: 75 %
Bitterness: 80 EBU
Colour: 464 EBC

At least 4 times as much Nottingham Yeast as I'd put in a normal brew:

I will brew something like this again, with a better recipe!!! Though I'll probably need some more Roasted Barley before I do.

DSM Dry Spray Malt, I had some conversion issues with the Mash, my wort gravity was only about 1050 or something which is nowhere near the 1100 or so I was expecting.

Probably not enough Pale Malt in the recipe to fully convert the other grains and adjuncts, though the Wheat & Munich malts should self-convert.
I would have done better with an extended mash period, much longer than my regular 90 mins...
So the DSM was dumped in the bulk-out the wort.

I'm now playing with recipe ideas with about 70% Pale Malt Just to be on the safe side! ;)
 
Efficency in big beers like RISs- (Aleman help me out a lot with this) due to having to stop the sparge well before all the sugars have been rinsed out in order to keep the OG as high as poss, 75% efficency would only be achiveable if you spagered right down to 1.008 and just boiled the exess water away. I set my efficency at 60% and that worked fine, so a TOP TIP is with big beers, reduce your efficency! And as you sugested elsewhere, run the weaker runnings into a vessel for another beer or two! Takes some palnning this brewing lark dunnit! :wha:

I think the 60% efficiency setting is a fine idea... Maybe something for Next weekend :)
 
Just seen your post - i`m planning an imperial stout in the future when i`ve collected enough 1/2 pint guiness original bottles so will watch how yours turns out :clap:
 
I wouldn't watch my recipe here though, or if you did increase the Pale malt % and got for a really long mash.
