Brewing stout recipe in next couple of days which calls for 360gms chocolate malt in 30 litre brewlength, havn't got this but was going to substitute with mix of brown and black malt which i have, will this be ok and what amount and ratio would you reckon, recipe already has 120gms roasted barley.don't want an undrinkable burnt taste though.
 
Brew went well, went 70% brown and 30% black in lieu of chocolate malt quantitity. What differenece do you think that may make in the flavour stakes?
