TG, I use an aquarium stat, Aquel TS500 and attach a brew belt to the FV, set the stat at whatever temp required and the sensor from the stat to the outside of the FV and it works really good.

If I do two brews at the same time I just put a double adaptor on the stat and plug the two belts to it.
 
Don't know if they would be the same, but I have just done a Muntons Stout. They recommended that when the FG is 1012 for two days it's ready to bottle.

My lagers/ales instructions have all said about 1002, so I'm guessing it's to do with the type of beer. I'm sure there will be folks on the board who can tell you.

Ah, interesting. All the recommendations I'd read were to only bottle when the beer is below 1010, but I think I'll just bottle this up anyway and see how it goes.
