I'm in the middle of making up a batch of elderflower cordial, using dried elderflowers, and I remember last time that I seemed to get quite a few bottles, and I was wondering if I could make a gallon of wine from the cordial, preferably a sparkling one.
I used 30g dried elderflowers, 1kg sugar, and 1.2l of water. Oh, and a lemon and a lime, and a tbsp of citric acid. If I can use this to make wine, how much would be needed for one gallon? Might half of it do, along with another 500g-1kg of sugar? Would I need to add grape juice or anything else?
Also, i was going to crush a campden tablet into the cordial when it's done t keep it longer, is this good or bad for making wine? I can just freeze extra cordial instead.
Alternatively, I have about 50g dried elderflowers left, perhaps it would be better to use a traditional recipe than futtering about with cordial?
When it's ready to be bottled, could I use cordial to sweeten and carbonate the wine?
