If I were to use an inkbird for a conditioning fridge at say 12 deg C how well would an inkbird hold the temperature do you think? I noticed when I tested mine at 21 deg without taping it to the FV the swing was quite a lot. Do you think a narrower range or perhaps taping it to a bottle would do the trick?

Yes, or a bottle of water, bit of copper, anything to act as a thermal mass and smooth out any erratic readings. 1 deg C range should be easy to get, 0.6 deg would be the minimum possible in the settings and I think that works for most folks.
