I wasn't sure where to post this but the ingredients are nearer to beer than wine or cider so....

Just been to St Petersburg and tried Kvass for the first time.

It is a sort of beer/alcoholic brew made with fermented rye bread and ....?

It tastes sort of Cola/Dandelion and Burdock but different and is about 2%

Anyone know of a recipe?
 
The Alaskan Bootlegger's Bible has a recipe, I think. IIRC it's just bread...

NB US measurements - their gallon is different, cups may be

1 2lb loaf dry rye bread
3 cups sugar
1/4 cup white raisins, chopped (optional)
Ale yeast
2 gallons water
Crumble bread into cloth bag in primary
Boil sugar and water, pour into primary
Add raisins
Cool, pitch
Remove bread after 24 hours
After 48hours more, transfer to loose capped conatiners and refridgerate, drink
OR transfer to secondary with airlock, bottle as ale
