Hi

I've been using the big book of brewing by Davied Line in which he says mash times should be at least 3 hours. Do I really need to mash for this long? I see that most recipes on this forum are for 60 - 90 mins?

Cheers Eddie, I'm brewing bee hive bitter of the recipes page it asks for 60 but I think I'll give it 90.

I always do an iodine starch test after 60 minutes. If there is any indication of starch left in the wort, I will leave it for longer and re-test. So far, the longest mash I have ever done is 75 minutes - and that was only because the damned phone rang just before I was going to perform a mashout.
