I have had a batch of elderberry on the go for about 8-9 days now (8-9 days since straining from must, fermented on must for 4 days).

the bubbles have gone to about 1 every 30-35 seconds.

When should i rack? Do i wait until fermentation has totally stopped, or should i do it now and then do again when no more bubbles and do sorbate /clearing etc?

Dont know if i should just leave as is, or rack this weekend.

thanks.

What's the rush?

First rack at 1 month.
Second rack at 3 months.
Final rack and bottle at 6 months.
Then leave it alone for another 6 months.

CTs at each stage, stabilise whenever you like, it will do the clearing by itself.

Have you got a hydrometer reading?

If you're still getting a couple of bloops per minute I think I would suggest you try to stretch your OH's patience for another week before moving it to the garage. When you do, wrap it in some old blanket, sleeping bag or some other sort of insulation to try to minimise day/night temperature fluctuations.
