Update: Okay so it's been reasonably active since I raised the temperature and gave it a gentle stir a week ago, it's been bubbling away quite happily, the bubbles have slowed over the last couple of days, and have almost stopped today. I've just taken a reading and disappointed to see it's only dropped two points to 1.014 (should be 1.008).

Do I just give up and just bottle it or is it worth another gentle stir to see if it start again and shift a bit closer to the 1.008?

I reckon that's done. If you want it to be...

Or if you want a bit more alcohol you could add a couple hundred grams plain table sugar. This will give another 1/2% based on doing a 20l kit
And the dryness using sugar might counteract any of the residual sweetness from the remaining complex sugars from your extract.
