Folks,

Could anyone suggest a web-site that explains the whys and wherefores of the different yeasts?

I see a few people using unusual yeasts and would like to know more.

A breakdown of their preferred sugars would be helpful too.

All available on the Wyeast and Whitelabs sites.

Never found anything good on the dried yeasts though unfortunately.
 
As stated http://www.wyeast and http://www.whitelabs.com will explain each yeast they culture, and optimal environment for each yeast.

The book "yeast" written by jamil Zainachef is a great resource. If you go to http://www.thebrewingnetwork.com and download the brew strong shows that pertain to yeast and yeast handling that is really helpful as well.

Yeast culturing and yeast health is my forte in brewing; yeast is a subject that really fascinates me since beer would not be made without it, and over 50% of the flavor of beer is derived from yeast. If you have specific questions about yeast or a particular strain I might be able to answer your questions. There are quite a few brewers on this board who have great knowledge in yeast I'm sure they would be more than happy to share.
