HELP NEEDED PLEASE :hmm:

Mr Witch has made a batch of wild plum wine he froze the plums, then defrosted them and put in pectolase left them for 3 days then added sugar syrup, we then had to go out for an hour when we got back the juice is fermenting and we have a 1 inch head in the demi john without the yeast or nutrient being added, HELP what do we do leave it to the wild yeast or add yeast :wha: :wha:

He had also added campden tablet at the same time as pectolase.
 
Thanks for that the yeast is going in, yes we added campden tablet at the start. Thanks for the link made interesting reading.
