I've had some mead brewing about a month now, and I'm aware that all in all it needs to be aged around a year. Does this aging need to take place in the demijohn or can I just add the finings and bottle it now and let it age in the bottles? Only I'd like to free up that demijohn :)

You can do it in the bottle if you want.
It's generally believed that maturing works better done in bulk, but it's not vital.
You'll probably find the bottles get a bit of sediment though

Aging mead in bottles works great. Just remember that it will take a while. For an experiment, you could try to open one bottle every 6 month, or once a year. I found this to be the best way of understanding the effect it has on the taste.

I just recently filled 3 bottles, and i plan to open them after 1, 2 and 3 years.

Store it somewhat cold (cellar temp is optimal) and away from sunlight. Good luck! :thumb:
