Can anyone tell me what results you have had with Demerara sugar, thinking of using it in this St Peters IPA,Always used brewing sugar, and what quantity would you use per ltr of Demerara.Would you say 5oz for 5 gallon.

I've used about 0.7Kg in a 23 litre batch of Belgian Pale Ale, which was a moderately light beer. It worked fine and I'd probably use it again. If you wanted a very clean flavour though, I'd probably go for the brewing sugar.

Demerara is unrefined sugar, so it's just sucrose with some molasses left in.

You could use it for brewing but the molasses won't ferment so the beer will taste of that, and the sucrose will ferment giving the typical "kit brewed with sugar" taste.
