help with control panel

Hi guys, i bought parts for my control panel a few years ago and never got round to doing it.(maybe i could not understand the electric brewery one)
my son has now giving me a kick up the backside to start it.

Can someone let me know what they used for the power relay switches as i never ordered them, or any help for doing it would be appreciated
i'm only using two pid's for hlt and boiler and 2 pumps, i would like a timer on it too.
