Hi

Im not very experienced at making wine and was hopeing that some of you experts out there could give me a helping hand with my plan, i have 1.5ltrs of pure apple juice and 1ltr of pure grape juice, my plan was to make a 4.5ltrs of wine from this, this is the bit i was hopeing you could help me with, i was thinking a level tsp of acid, glycerine and maybe a tsp of tannin and the nutrient and yeast, have i missed anything? would you suggest doing something else with the juice?

californian connosuir pinot grigio
californian connosuir cabernet savignon/merlot
Blackberry wine from wild fruit
 
Possibly a teaspoon of Pectolase, then sugar till SG is 1090.

I tend to cheat and subtract the sugar in the juices from 1300g to give my estimate for 1090 with a filled DJ.
 
Thanks, i used some pectolase, i havent put the rest of the stuff this time as i would like to see what its like without first.
