I opened a bottle a few days ago and at this point it's still very young and so slightly bitter, but with time it should mellow out into a very nice tipple. It would probably do well for a sparkling wine. The only disappointment for me was that it's a bit lacking in body, which is why I recommend adding the raisins. I also recommend aiming for a low ABV, around 10.5 to 11%.
