Has anyone made Damson wine with the stones still in during initial ferment?
I have made 3 previous batches and always de stoned before primary ferment and they have all been good.
I was in a rush last Autumn so just froze a load with the stones in,I defrosted them and got them under way last week,they have just gone into Dj`s this eve.
I make Sloe wine most years and they are very closely related and for obvious reasons you don`t de stone those and it always comes clear,so I thought I would try the same with this years Damson. I use Pectolase of course.
New to this forum,but been making country wine for a long time.
