This might not meant to be in this forum but moley im really curious in that photo you showed me of your collection whats in the champagne bottles?
if this post shouldnt be here will remove. :)

Just nipped down the cellar to check:

3 Champagne, 1 Cava, 1 fizzy Pinot Grigio and 2 Normandy Cider.

There's also about a dozen bottles of commercial wines in that left hand rack, 2002 - 2006.

Is it much different or more difficult to brew things like champagne and cava?
I think the presentation of a champagne bottle all wrapped is second to none.

Well you can't make Champagne unless you live in a particular region of France, but I think you can be absolutely anywhere in Spain to make Cava ;)

Those are commercial bottlings, either bought or received as gifts.

My elderflower shampagne is upside-down in a crate on the other side of the cellar and my fizzy WOWs are in a couple of Cornelii.

There is a topic about sparkling wines here.

Edit: I was wrong, Cava production is restricted to 8 regions of Spain.
