Hi all I am just setting out on the homebrew journey from my departure site Wilkos so have lots of learning to do. I have made my first batch of IPA and a small amount of Etheopian honey beer with my own hops so fingers crossed and thank goodness for the forum.

What's Etheopian honey beer?
If I google it something called "tej" is returned and it doesn't look very easy to brew or to get hold of the ingredients.
 
The beer I have had a go at involved drying my own few hops and adding this to unpasturised raw honey, leaving this for a few days and then putting it into a jug with 1 to 4 ratio honey to water to top up the jar with an air lock and leave for two weeks before tasting it! Wish me luck. The recipe is via Sandor Katz cited in Basic Fermentaion.
