Hi,

I started my golden stag brew last night.

I added 500g of brewing sugar to the standard wort as the final ABV never seems to be as advertised (maybe because I'm still an amateur).

I got a Starting Gravity reading of 1.044, so it should be about 4.8% by 19th/20th Feb.

you didn't say what the final gravity is. You should add any sugars pre dissolved to the wort also I would bin the kit yeast and use a better quality one like s04 or notty. Use pre boiled water in the airlock as it could drip into the fermenter. Also don't rely on the stick on thermometers as they are not accurate. Tyr rehydrating any yeast with 100mls of preboiled cooled water it gives a better start. Don't stir the yeast in leave it on the top. Make sure anything you put in the wort is sterilised first
 
I would say the yeast that comes with the Golden Stag is fine to use.
I think its 10 grams and the Festival kits are all top notch in my book.

This is my 6th kit and so far, all the kit yeasts have been fine.
The beers from all the kits have been a success.

Looking forward to the Golden Stag and St Peters Golden Ale in March.
