Presumably it's a similar idea to making your brewing liquor more chloride-biased when you don't want to emphasise bitterness in your beer.

Of all people, brewers should understand the influence of water chemistry on flavour.

The thing that ruins tea is not leaving the bag in the hot but not boiling water long enough, I am guilty of this, throw the bag in the cup pour boiling watar on the bag then squash it against the side of the cup to get the flavour pit quick.
